Uhhhh... temperatures are dropping and its time to get cosy and warm!!!
In these cold days it is just fab to eat something which is warming to the body and the soul.
The other day, I made this recipe up and I tell ya, it was delicious! I was impressed with myself. Here. I share it with you. Try it out!
Roots and Beans casserole
You will need a big pan with:
500g of overnight soaked black beans
2 big beetroot, chopped
Add 1 litre or more of boiled water (enough to cover the beans and beetroot well)
Bring it to the boil then simmer for 1 hour.
In a frying pan, sautee this mixture:
a bit of ghee (or olive oil)
1/2 a onion, chopped
1/2 a leek, chopped
3 cloves of garlic, crushed
1 potato, chopped
2 carrots, chopped
a handful of chopped salami (the real thing!
bought from a good farm market, the better!)
1 tsp of cayenne pepper (or more to taste)
4 bay leaves
salt and pepper to taste
After 1 hour, add the mixture to the beans and cook for another hour or so. Add more water if needed.
I added 1tsp of cornflour to thicken it and
2 handfuls of thinly sliced cabbage (kale will also work well!) and cooked for a further 15min.
That's it!
The earthy and sweet flavours of the beetroot and carrots work so well with the beans. And the cabbage... bits of salami and the spiciness of the cayenne pepper... Sooo nice!
I served it with wholemeal pita bread topped with a hint of ground coriander, sweet paprika and some ghee, lightly grilled and chopped coriander.
As an alternative, serve with brown rice or whatever you want, really.
I would say it serves 3 to 4 people.
